Fall is coming and if you are in Tuscany and you want to try one of the dishes par excellence during the spring period, we absolutely recommend you to try the “Gnudi”.
In this article we are going to analyze the preparation of this typical food and perfect food and wine pairing.
Where and When was this dish born?
First dish of the Tuscan peasant tradition, it is debated whether it is typical of the regions of Maremma, Mugello or Siena.
Gnudo literally means “naked” in Tuscan dialect.
Basically the “gnudo” is the filling of the Maremma tortello, which is then boiled and seasoned with butter and sage.

350 GR OF RICOTTA CHEESE
500 GR OF FRESH SPINACH
PARMESAN CHEESE TO TASTE
FLOUR TO TASTE

SEASON WITH BUTTER, SAGE AND PARMESAN CHEESE
Carefully clean the spinach and blanch it in salted water for a few minutes. Once drained, let them cool and then make sure to dry them. Then add the ricotta and begin to knead. Then it’s the turn of the eggs, and the touch of class – nutmeg.
Obviously, the ricotta must be added and the kneading must continue. After this last step, use a spoon to create the “gnudo” and flour it before cooking it in boiling salted water. Throw them into the water. The moment they rise to the surface, they will be ready to be drained. You can then serve them with a dressing of melted butter, Parmesan cheese and sage. Alternatively, you could also serve them with a tomato sauce.
And what about the perfect combination for this dish?
Well, without a shadow of a doubt a Chianti Classico from the Radda in Chianti area if you want something fresher or, as an alternative, something a bit more energetic and muscular like a wine from Le Fonti, a lovely winery from Panzano in Chianti.
A fine and elegant wine, with a complex but never impetuous bouquet which is well balanced with a dish of medium complexity such as “Gnudi”.
You just have to try it.
